Method · Shaken
- 1Shake everything except the seltzer hard with ice.
- 2Fine-strain into a Collins glass over fresh ice, top with seltzer and stir gently.
- 3Garnish with a Thai basil sprig and a slice of Thai chile.

- 1 lb cane sugar
- 16 ozhot water
- 8 oztamarind paste
- 1 stalk lemongrass, finely diced
Method
- 1Stir the sugar into the hot water, work in the tamarind pulp and add the lemongrass. Steep for at least a day, then strain and chill.
