How batching works
Multiply each ingredient by the number of drinks. Stirred drinks get their dilution as water in the batch, so each pour comes out ready over ice. Shaken drinks are usually batched without water and shaken to order. Bitters don't scale reliably, and fresh juice, dairy and bubbles fade, so they go in close to service.

Batching FAQ
How much water do I add to a batched cocktail?
Stirred drinks usually take about 20% water by volume to match the dilution from stirring. Shaken drinks are often batched without water and shaken to order, or with about 25% if served straight from the batch.
Can I batch bitters?
Bitters don't scale reliably in batches, so add them to each drink as it's made.
How long does a batched cocktail keep?
Spirit-only batches keep well in the fridge. Anything with fresh juice, dairy or bubbles is best mixed on the day.
How many drinks are in a 750 ml bottle?
750 ml is about 25 oz, so about eight 3 oz drinks before dilution.
