- 1Build everything in a double rocks glass over a large cube and stir until combined.

Ingredients
- 2 cupspear juice
- 1 cuphoney
- 1 cupdemerara sugar
- 1 cinnamon stick
- 10 cloves
- 1 star anise
- 1 knob ginger
- 2 lemon peels
Method
- 1Warm the pear juice, honey and demerara in a saucepan until dissolved. Add the spices and peels, steep for fifteen minutes off the heat, then strain.
