- 1Stir everything with ice until chilled.
- 2Strain over a large cube in a rocks glass and garnish with an orange coin.

Ingredients
- 850 gpapaya purée
- 850 gsugar
- 1 tbspsalt
- 4 tspPectinex Ultra SP-L
Method
- 1Bring the purée, sugar and salt to a boil, then simmer on medium-low until the sugar dissolves. Off the heat, stir in the pectinase and rest at least thirty minutes. Separate the solids in a centrifuge or strain through a fifty-micron filter bag.
