Egg White Cocktails

49 drinks · Updated October 2026

Egg white gives a cocktail a silky texture and a thick layer of foam without adding much flavor. Its proteins stabilize the air bubbles introduced by shaking; bartenders often shake once without ice (a dry shake) and again with ice. It appears most often in sours. The Whiskey Sour and the Clover Club, a gin and raspberry drink from Philadelphia's Bellevue-Stratford Hotel, both use it. The Ramos Gin Fizz, created by Henry C. Ramos in New Orleans in 1888, is the best-known showcase of its texture.
