Ingredients
- 750 ml dry white wine (Côtes de Gascogne)
- 0.5 oz dried maitake mushrooms
- 1 oz dried kudzu vine
- 0.5 oz dried chamomile
- 5 bay leaves
- 4 oz fresh ginger
- 2 oz whole black peppercorns
- Pedro Ximénez sherry, one part to every two parts infused wine
Method
- 1Gently heat the wine with the mushrooms, botanicals, ginger and pepper for an hour without boiling. Rest for a day, strain, then fortify with one part PX sherry to two parts wine.
