Ingredients
- 700 g clarified lemon juice
- 700 g sugar
- 100 g lemon peels
- 20 g citric acid
Method
- 1Warm the clarified juice, sugar and peels gently, stirring, and pull it off the heat as soon as it starts to simmer. Strain out the peels, stir in the citric acid and cool. Clarify the juice first with pectinase (and optionally Kieselsol and Chitosan), then centrifuge or filter.
