Ingredients
- 1 whole nutmeg, broken up
- 1 tbsp allspice berries
- 1 cinnamon stick, broken
- 2.66 cups orange juice
- 2.66 cups pineapple juice
- 4 bottles (750 ml) Spanish red wine
- 1 cup VSOP cognac
- 1 cup dark rum
- 0.5 to 1 cup simple syrup (1:1), to taste
Method
- 1Toast the spices in a large pan until fragrant, add the juices, boil and then simmer until reduced by a third. Strain, stir in the wine, cognac and rum, and sweeten with simple syrup to balance the tannins. Add orange slices and chill.
