Ingredients
- 500 g banana flesh and 500 g sugar (flesh syrup)
- 500 g banana skins and 500 g sugar (skin syrup)
- 26 ml malt vinegar
- 4.25 g lactic acid
Method
- 1Separately massage the banana flesh and the banana skins with equal weights of sugar in sealed bags, rest a day at room temperature, then massage again and fine-strain each. Combine two parts flesh syrup to one part skin syrup and stir in the vinegar and lactic acid (amounts given are for 1350 ml flesh syrup and 675 ml skin syrup).
