Ingredients

• 5 oz Aperol
• 2 oz gin
• 0.25 oz absinthe
• 1.5 oz lemon juice
• 1 cup whole milk

Method

1. 1Mix everything but the milk. Heat the milk to about 170°F, take it off the heat and pour in the Aperol mix, stirring a minute or two as it curdles. Strain through four layers of cheesecloth, passing the cloudy first runoff back through until the liquid runs clear and pinkish orange. Chill.
