Ingredients

• 1 part white sugar (by weight)
• 1 part water (by weight)
• Fresh strawberries, hulled and halved (about 1 cup per cup of water)

Method

1. 1Simmer the strawberries in the water for 5 minutes, mashing them as they soften. Stir in the sugar until dissolved. Let cool, then fine-strain. Store in the refrigerator.
